Oh how I love oatmeal. So versatile and unique, oatmeal makes a delicious and healthy snack throughout the day. These tender baked oats are drowning in scrumptious plump blueberries and warm honey-cinnamon bananas. Don’t forget the almonds for a crunchy topping and healthy fats.

2 medium or large ripe bananas

1 1/2 cup fresh blueberries

1 cup uncooked quick oats

1/4-1/2 cup chopped almonds

1 cup dairy or nondairy milk (I used unsweetened vanilla almond milk)

1/4 cup honey

1 large egg

1/2 tsp vanilla extract

1/2 tsp almond extract

1/2 tsp baking powder

1 tsp cinnamon

dash of salt

 

Preheat the oven to 375° F. Spray an 8 x 8″ or 9 x 9″ baking dish with non-stick cooking spray or add oil/butter. Slice the bananas in about 1/2 inch pieces and layer on the bottom of the dish. Add about half (3/4 cup) of the blueberries on top of the bananas and top off with a 1/4 tsp cinnamon and 1 tbsp honey. Bake for 15 minutes.

In the meantime, grab a medium bowl and combine the oats, half amount of the almonds, baking powder, 3/4 tsp cinnamon and salt. Stir until mixed and set aside.  In another bowl, whisk together milk, egg, remaining honey, vanilla and almond extract.

Once the bananas are done, remove them from the oven and layer the oats on top, followed by pouring the wet milk mixture evenly. Scatter the remaining (3/4 cup) blueberries and almonds over the oat mixture. Bake for 30 minutes or until the top is golden brown. Let cool a bit from the oven and serve warm. I found this also tastes good when reheated with some add-ins. I added vanilla protein powder when it was still gooey and topped with granola.
