So my first blog post in Gainesville, in my new apt right downtown.

I am loving this city so much. I mainly enjoy how everything is super close that I’ll be able to bike everywhere. The farmer’s market every Wednesday is a plus as well…

I’ll miss Orlando for the memories I’ve had there and the friendships of course, but I feel Gainesville has a few stories to come for me as well. We shall see what the future holds ;)

So what does my first blog post in the city where I’m going to get a dietetic degree consist of?

Well avocado, toasted carob, banana, and hemp to start.

There’s this sweet place called Ward’s Supermarket where I stumbled across some toasted carob powder. Inspiration for what’s below…

Have ya ever created with carob? A sweeter cocoa I feel; I’m enjoying this new pantry addition.

You bake these and then put them in the fridge and the texture firms up a bit. It’s not quite a cookie, hard to describe but it’s healthy, yummy, and I couldn’t stop eating them. Btw, no you cannot taste the avocado.

 

Ingredients:

Wet:

1 small ripe avocado

2 small ripe bananas

1 tsp vanilla

 

Dry:

30g hemp protein powder (about 3 tbsp)

1/4 cup toasted carob powder

1/4 cup brown rice flour

2 tbsp raw sesame seeds

2 truvia packets (or other stevia/sweetener)

 

Toppings:

dried coconut flakes

 

Directions:

Oven: 350 degrees

1. Mash well bananas and avocado in a bowl and mix together

2. Add in vanilla

3. Combine dry ingredients together in a bowl

4. Incorporate the dry ingredients into the wet and mix well

5. Line a baking sheet with parchment paper and add batter in preferred shapes. Top with coconut flakes.

6. Place in oven and bake for about 20 minutes. They may seem undercooked but once stored in fridge they harden up.

7. Take out and let cool, set and store in fridge

8. Serve and eat once chilled
