More than likely you need a break. Sometimes all ya need is a batch of warm, freshly flipped good ol’ banana chocolate chip pancakes to soothe the soul, stomach, and heart. Pick your favorite recipe, or even more fun try something new. Try mine. Minimal sugar..well excuse me I did add in some chocolate chips but hey it’s exactly what I wanted to do and it turned out perfectly.
Do what you want peeps, follow your pancake desires.
Make these pancakes. Eat ’em with your hands, eat ’em with your feet. Hey, who’s stoppin’ ya? Bring out your savage nature and tear these pancakes apart. But make sure to savor each bite. Each and every rip and tear of the pancake. Banana in one bite, chocolate in another. Crispy brown edges of the coconut oil. Sweet sweet splendor.
Top them with raw wildflower honey or unrefined coconut oil. Eat ’em plain, sitting on the floor. Eat these in your pajamas. Make these whilst listening to your favorite folk song.
Maybe even take a picture of them so you’ll remember that one time you made some pancakes on a fine evenin’. Show this picture to your friends tomorrow. Probably they won’t care but you know they’re just jealous and wish they could possess such sweet pancake abilities like your marvelous self.
Put a smile on your face. Perhaps even put a smile on another’s face. You can never go wrong in doing so.
And on that note, I have for you gluten-free chocolate chip banana love…Produced from all of life’s magnificence and bumpy roads..
Serves: 1 Bridget or two normal people
Ingredients:
Dry:
1 cup brown rice flour
1 1/2 tbsp arrowroot powder
1 tbsp baking powder (gluten/sodium free)
1/2 tbsp coconut palm sugar
stevia (optional)
chia seeds (optional, but why not?)
Wet:
1 1/4 cup non-dairy milk (I actually had to use part H2O and it turned out swell, FYI)
1 ripe banana
1/2 tbsp unrefined coconut oil
1 tsp pure vanilla extract
1-2 tbsp vegan chocolate chips
Directions:
Combine all dry ingredients in mixing bowl. Add in wet ingredients and carefully mix. Do not over mix.
Oil/non stick spray a pan on medium heat.
Add batter to preferred size on pan and cook until bubbles form and edges are slightly cooked.
Flip pancake and cook until done. Should be fairly soon.
Repeat.
Eat.
Repeat.
These pancakes are soft, fluffy and thick with a unique texture from the brown rice flour.
Follow this up with some warm tea because you shall be oh so full.
It has been awhile, pancakes. Glad we are finally acquainted again.
Tear ’em up, like so:
Gooey chocolatey mess. Perfection.

Thanks Vee. Sorry to hear that! No worries though, you can probably just omit them if ya want or 1/4 cup pumpkin puree or even applesauce should be a great sub. Maybe even 1/4 cup beet puree would be nice! I’ve never tried that though.

Oh and you may want to tweak the sweetener a bit if you’re omitting the bananas as they accounted for quite some sweetness in my pancakes.
