Hello my friends. I must express much gratitude for you joining me on this fine day…my blog anniversary. Oh how I have come a long way in only a matter of a year. Big (little) things have changed..and inevitably formed. Wonderful things lie ahead..

I chose to make a raw cake, as it was something I have been yearning to do for quite some time now. With all my favorites of course.. Raw cacao, chia/hemp seeds, virgin coconut oil, coconut palm sugar, raw wildflower honey. Mmm divine.

 

I wanted this to come out pretty damn good and spent way too long thinking about flavors, ingredients, textures.

And then I decided, hell with it. Throwingrandomnesstogetherdependingonwhatsoundedgoodinmyhead ended up happening and guess what? Turned out bravo (maximum simplicity too), thus my time and place here sharing this special treat with you…

The crust provided a nice chocolate nuttiness from the flax, hemp, and cacao combination. Sweet chocolate and nut undertones. Speaks sophistication to me, a dessert worth savoring sans the glycemic overload.

Raw wildflower honey. Three beautiful words, so irresistible. Perhaps unless you’re strict vegan…Sub coconut palm or perhaps maple if so. Also, whole vanilla beans are more than welcome in place of le extract.

A bit of a reflection…

Over the past year I’ve transitioned from a health-conscious individual who unknowingly ate foods that she thought was beneficial, to a more diverse plant-based body ingesting a plethora of nutrients. Juicing, soaking, sprouting, raw and alive foods. Cooked foods where applicable, but all plant based and all full of health. I cannot recall the last time I felt this good with myself and my diet over my 21 years of thriving. I’ve become more in-tune with nature, myself, and the foods I eat. I’ve switched to completely natural alternatives for hygiene and all aspects in my life. I savor every organic and local piece of produce that I receive. Never wasting an heirloom carrot or leaf of rainbow chard. It’s been a long yet satisfying journey of health nevertheless and I can say I have much more to learn, experience, eat! So much has happened in only one year, my anticipation for what’s to come is overwhelmingly marvelous. I’m ready.

I am proud of where my blog is today. The Road Not Processed has definitely helped me grow in this health world and it shall continue to press on with my future.

I ponder my future. What does the future have in store for me? Where will I be? Well one things for certain, my dietitian career. I’m glad I’ve finally decided to be on the road to fulfill my passion..help others with their health and overall well being. ‘Tis going to be awesome.

I’m excited for the twists and turns, the craziness and spectacular times that life will take me on.

Oh the adventures…

 

Makes: a very happy person

Inside layers/crust!

1 1/2 cup walnuts

1/4 cup whole flax seeds

1/4 cup hemp seeds

2 tbsp chia seeds

1/4 cup raw cacao powder

1/4 cup raw wildflower honey

1/2 tsp vanilla extract

 

Frosting

1 small ripe hass avocado

2 very ripe large bananas

1/4 cup coconut palm sugar

1/4 cup unrefined virgin coconut oil

1/3 cup raw cacao powder

1/2 tsp vanilla extract

 

Toppings:

goji berries, cacao nibs, mulberries, kiwi berries, hemp seeds, etc. (optional, but nice)

 

Directions:

Blend all the ingredients for the crust in a food processor until all is mixed and the texture is pliable. Place crust in a baking dish, pan, anything really that can form about 1 inch thick of crust. Pat down and store in fridge while you move on to the next step..

Place all ingredients for frosting in food processor and blend until smooth and creamy.

Take the crust out of fridge and cut into even sections of your preferred amount. For example, 4 sections will make two pieces of cake.

Spread frosting onto each cake piece and stack on top of each other.

Add toppings to preference.

Store in fridge, the frosting thickens up a bit from the coconut oil.

My roommate’s words: this is a really good picture of a pile of poop. HA. Thanks Danielle you are right, I see it now. Being involved with the raw food world, I suppose that I actually view poop as edible and delicious…

And a random picture of a gluten-free beer I recently tried. Pretty good for a GF beer. Interested in trying others out there, although I had heard some taste blah.

Oh and a random thought..Funny how caterpillars in their larva stage are physically incomparable (unattractive) to their counterpart latter stage, reproduction i.e. the butterfly. Bottom line: when it’s time to reproduce, get pretty!

    • Oh haha glad you made ’em and your father enjoyed!! Funny, my father wanted me to make these for him when I visit as well. Good to know it’s dad approved.
      I order my hemp seeds online or you can buy them at Whole Foods or other health food stores. I usually wait till they go on sale, but here’s the amazon page for them: here
      I stick to organic. Nutiva, Manitoba Harvest, and Nativas Naturals are good brands, but I’m sure there are definitely other swell brands out there, I just haven’t had ’em yet.
      Hemp seeds are some of my very lovely friends ;) I hope you guys become acquainted…
