These were sorta an impromptu muffin. A healthynighttimecraving muffin. I’ve always been wanting to create some sort of carrot or zucchini spice muffin and now I have my food processor to do the dirty work for me =).

I basically just threw ingredients together from what sounded like it’d taste good.

Maple syrup, pumpkin spice, orange zest, and carrot muffin base.

These would make a great breakfast muffin or energy snack, maybe add on some sunflower seed butter.

Makes 8 fairly good sized muffins

 

Dry:

1/2 cup almond flour

1/2 cup millet flour

1/2 cup spelt flour

2 tsp pumpkin spice

2 tsp baking powder

1/4 cup walnuts

 

Wet:

1 cup grated carrot

1/2 cup maple syrup

1/2 cup applesauce (I used a 4oz container)

2 flax eggs

1/2 tbsp orange zest

1/4 cup raisins

 

Make the flax eggs and set in the fridge. Zest the orange. Grate the carrots either by hand or in a food processor (yay FP). Combine all dry ingredients together. Combine all wet ingredients together, mix. Add the wet to the dry and mix (don’t over mix) until all is combined.

Preheat oven to 350 and bake for about 30-35 minutes, until a toothpick comes out clean and centers are cooked.

Take out of oven and let cool on cooling rack.

Eat, share, eat.

Add sunflower butter, eat.

Eat again.
