Artichokes. Delicious, healthy, intricate looking. Artichokes are actually extremely easy to prepare, cook, and eat.
Here’s what I did:
2 large artichokes
1/2 lemon
1-2 tbsp sunflower oil
1-2 cloves of garlic, chopped
few leaves of fresh basil
Preheat oven to 425 degrees.
Rinse each artichoke thoroughly and then trim the stems.
Drizzle oil over artichokes, followed by squeezing the juice of a lemon, then adding the garlic and basil.
These would still be good sans the basil, or even other spices such as thyme or rosemary, etc.
Tightly wrap each artichoke in tin foil and place in a baking dish. Set in oven and cook for about an hour.
Remove once fully baked and let cool in the baking dish.
I ate these just as is. So good.
The fuzzy insides of an artichoke are always so peculiar to me, but once cut out they aren’t an issue. Eating the heart is my favorite.
