Fried egg in toasted sesame oil and balsamic with a side of steamed beets, spelt, and tempeh over a bed of arugula topped with gouda and fresh basil.

Ingredients:
few handfuls of arugula
1 egg
1/2 cup cooked spelt
3/4 cup cooked beets, chopped (I steamed mine..roasting works too)
1/2 cup cooked beet greens
1/2 cup tempeh
1 oz gouda cheese
1-2 tsp toasted sesame oil
balsamic vinegar
fresh basil
garlic clove, minced (optional)
ground red pepper (for spicy factor, optional)
1 tbsp nutritional yeast (optional)
avocado (optional)
Directions:
Fry an egg or two in toasted sesame oil, garlic (optional), and a dash of balsamic vinegar. Set aside
Rinse a few handfuls of local arugula, place in bowl
Top arugula with cooked beets, tempeh + spelt* (add nutritional yeast now, optional)
-*I cooked the spelt in a rice cooker and threw in the chopped beets about 15 minutes before the grain was ready. I threw in the beet greens, tempeh, garlic, and ground red pepper when all was done, stirred then let sit for 5-10 minutes. The heat cooked the rest just right.
Top with fried egg
then gouda and fresh basil
