I threw this one together last minute using ingredients I had on hand. The shell pasta, vinaigrette and sweet strawberries, quite yum.

 

Not the best photos at all, but I was super hungry at night and wanted to capture this recipe to share with you all. A nice, light and refreshing meal.

 

Serves: 2

2 servings of your favorite pasta

1/2-1 cup chopped strawberries

1/4 cup Bragg vinaigrette salad dressing (or any other vinaigrette)

few minced basil leaves

ground black pepper, to taste (optional)

 

Cook the pasta according to directions. Drain and rinse with cold water. Set aside in the fridge and allow to cool.

Chop up the strawberries and add to cold pasta. Add vinaigrette (more or less to preference) and top with basil leaves.

Mix all together and you’re done.

 

I added a few more ingredients to my dinner..Lightly cooked portobellos, spinach, and tofu.
