Simple meal I’ve been enjoying lately..Healthy fats, fiber, complex carbs :)

 

Serves: 2-3

Ingredients:

1/2 cup uncooked quinoa

1 cup fresh or 1 can garbanzo beans (I used no salt added)

few large handfuls of spinach or other greens

1/2 avocado

few squeezes of lemon juice

hemp seeds (optional)

ground black pepper, to taste

 

Cook the quinoa according to package instructions. Meanwhile, lightly cook the spinach until tender. Sprinkle with lemon juice (to taste). Lemon aids in iron absorption from spinach :).

Set aside.

Heat up the garbanzo beans (I used same pan as spinach).

Once quinoa is cooked, combine everything and top with avocado slices, hemp seeds and spices. You’re done!

I usually make this and have left overs for the following day or two. So delicious and I feel so good afterwards.

    Would this be good without the avocado? I’m not a huge avocado fan but this does look yumm!

    • Yes of course! You can add a little bit of your favorite sauce (tomato, salad dressing, etc.) if you want to make it a bit more flavorful for your likings :)

    I love garbanzo beans with avocado, and the hemp seeds on top was a great idea!
