Vegan Chocolate Chocolate Chip Banana pancakes as a matter o’ fact :D. How could that not put a smile on your face? Especially while listening to Bon Iver..

Chocolate soy milk, [two kinds] chocolate chips, cacao nibs, and unsweetened dark cocoa powder come together, so good.

(Serves: 1-2 hungry hippos)

 

1 cup whole wheat pastry flour

1/2-1 tbsp baking powder

1 medium-large very ripe mashed banana

1  cup chocolate soy milk

1 Tbsp coconut oil

1 Tbsp unsweetened applesauce

1/2 tbsp vanilla extract

1/2 cup dark chocolate chips, semi-sweet chocolate chips, cacao nibs (I used all three)*

1 tbsp unsweetened dark chocolate cocoa powder (raw cacao powder works)

1 tsp ground cinnamon

1/2-1 tbsp coconut palm sugar (optional)

 

Combine all the dry ingredients in a medium bowl. Mix well and do the same for the wet, then combine the wet to dry. Don’t over mix! It can ruin the texture of the pancake, lumpiness is ok.

Set your pan or your griddle to medium/medium-high and grease with non-stick cooking spray or cooking oil. Add batter to skillet. Flip when tiny bubbles form on outer edges and cook on opposite side. Remove when cooked and slightly puffy. Let cool or DON’T let cool. I never let my pancakes cool unless I have to, and in this scenario I had to. Taking pictures was so hard to do with a batch of warm, oozing chocolatey pancakes tantalizing your taste buds right in front of you..

Top with more chocolate chips? Coconut oil, pure maple syrup, some raw honey and hemp seeds perhaps? How about some coconut flakes?

    These look soooo good! I just thought to try them with almond flour! How much does the chocolate milk contribute to the taste? If I used regular almond milk, I am sure it will still be really good with the chocolate chips, just curious.

    • it contributes a lot, which is why I called them chocolate chocolate chip pancakes. You most certainly can make them without the chocolate milk! Add in some cocoa powder if you’d like..May need to make it a bit sweeter though or it could be too overpowering. If you simply just use the other milk, these will be regular pancakes..of course still good =)
      With the almond flour, you may need to adjust the ratios of other ingredients.. perhaps more leavening product, egg/binder..
