One of my favorite peanut butter sandwiches lately. Pumpkin, peanut butter and bananas on sprouted whole grain toast. I also added some raisins and spices.

 

Ingredients:

1 or 2 slices 100% whole grain bread (I use Ezekiel low-sodium)

2 tbsp peanut butter (all-natural, no salt/sugar added)

1/4 cup pumpkin (100% pure pumpkin)

1/2 ripe banana, sliced

1/2-1 scoop of vanilla protein powder

cinnamon or pumpkin spice, to taste

sprinkle of raisins, walnuts, pecans

 

Directions:

Grab the freshly toasted bread slice(s) and spread the peanut butter on.

Next mix the protein powder, pumpkin, and spices together and layer on the pb toast.

Add banana slices

Sprinkle raisins or other toppings you find desirable

Voilà!

I’m sure this would be awesome with a drizzle of honey or even some granola. Possibilities are endless!
